Plus pr\u00e9cis\u00e9ment, les prot\u00e9ines sont des machines mol\u00e9culaires qui remplissent de nombreuses fonctions \u00e0 l&rsquo;int\u00e9rieur et \u00e0 l&rsquo;ext\u00e9rieur des cellules. Les prot\u00e9ines sont constitu\u00e9es de 20 \u00e9l\u00e9ments constitutifs appel\u00e9s acides amin\u00e9s. Alors que notre corps peut fabriquer 11 des 20 acides amin\u00e9s, les 9 autres doivent \u00eatre consomm\u00e9s par la nourriture que nous mangeons. En moyenne, les individus consomment environ 7 grammes de prot\u00e9ines par 20 livres de poids corporel par jour. L&rsquo;\u00e9tude a identifi\u00e9 7 variantes g\u00e9n\u00e9tiques associ\u00e9es \u00e0 la consommation de prot\u00e9ines. La pr\u00e9disposition g\u00e9n\u00e9tique \u00e0 une consommation de prot\u00e9ines plus \u00e9lev\u00e9e s&rsquo;est av\u00e9r\u00e9e corr\u00e9l\u00e9e \u00e0 l&rsquo;ob\u00e9sit\u00e9, au diab\u00e8te de type 2, aux maladies cardiaques et \u00e0 l&rsquo;indice de masse corporelle (IMC). Les auteurs \u00e9mettent l&rsquo;hypoth\u00e8se que la consommation de prot\u00e9ines animales, par opposition \u00e0 la consommation de prot\u00e9ines v\u00e9g\u00e9tales, est probablement \u00e0 l&rsquo;origine de la corr\u00e9lation positive avec une mauvaise sant\u00e9.<\/p>\n\n<p><strong>LE SAVIEZ-VOUS?<\/strong> Bien qu&rsquo;il existe des recherches contradictoires sur la question de savoir si la consommation de viande rouge est nocive ou non, la plupart des preuves soutiennent une consommation \u00e9lev\u00e9e de viande rouge contribuant \u00e0 divers risques pour la sant\u00e9.
